I've got these in the oven right now! I used 2 cups of frozen raspberries, but ended up with far more liquid than shown. I ended up just omitting most of the milk and the batter was fantastic. I think they'll turn out just fine, but wanted to post a heads up that some frozen raspberries seem to be more liquid producing than others ;). These are totally the cupcakes that my little girl self would have gone crazy for, so I'm making them for my own birthday (tomorrow) :-p.

Hi Kay,

I tried out this recipe twice. Both times when the cupcakes came out, I let them cool and then cut it open. However, I found they had a very glutenous sort of texture. They weren't light and fluffy but still tasted good. What did I do wrong? I aslo found the cupcake batter a little too thick to begin with. Help!

@Anne:

I try and shoot at the best hours of the day. My kitchen has a fairly small window, but the light that falls through it is nothing short of amazing. I bounce it back using a 60cm reflector (I have bigger ones as well, but they're clumsy to work around), and that is pretty much all I need.

Hej!
Those look absolutely amazing! I love the fact that you give step-by-step photo instructions - I'd never have the time/kitchen space/ or lighting to do that! Talking of lighting, you say you only use natural light.. Can I ask how you manage to get the pictures to look so bright and fresh even when it's a rainy or grey day outside? I'm intrigued...
Groetjes,

I am so making these for my 2yr olds birthday in April! They look fabulous!
Of course I'll need to practice making them between now and April just to make sure I get them absolutely right. ;) lol

@Barbara:

They mentioned it in the bacon & chicken posting, and I actually saw the posting this morning!
Have to say I was curious how it turned out with orange and garlic, so I left a comment there saying that I had posted an almost identical recipe and how delicious it was etc. Much to my surprise my comment wasn't approved. I guess the blog owner only needed the inspiration :)

@Marla:

I pretty much used the same amount of strawberries, but only make it when they're in season and really bright red and fragrant.

Would you replace the amount of raspberries with the same amount of stawberries? Any other changes for strawberry cupcakes? (These look yummy....but my family adores strawberries!)Thanks!
