Herbed Eggs in a Hole

The best breakfast sandwich ever! I can’t imagine my lazy weekend breakfast or brunch without eggs in a hole. Here’s how you fix our (and yours probably too) family favourite for lots of people at once in a fuss-free way: your oven.

Of course the amount of people you can feed at once depends on the size of your oven, and size does matter, but it should give you far more room to work with than an average stovetop has to offer.

As an added bonus the bread will be really light and crunchy! I spread the bread with a compound butter giving it an earthy flavour with just enough kick to make it more interesting. Top it off with a handful of grated Parmesan and you’re good to go.

 

Ingredients:

bread
eggs (mine were size M)
butter (about a tbsp p/p)
handful flatleaf parsley
pinch of chili powder
grated Parmesan
pepper & salt

Directions:

 
Preheat your oven to 180Cº (355Fº) and heat a non-stick sheet pan (I used my non-stick roasting tray) along with it.
 

You can use plain butter, but why be plain when you can make it so much more interesting? I used about 1 tbsp (salted) butter per person.

Add a handful of parsley, roughly 1/4 tsp chili powder, an equal amount of black pepper and a pinch of salt to the butter and blitzed until it’s a pretty green butter.

Let the butter soften completely.
 

Grate the Parmesan… a little goes a long way.

I opted for white casino bread (it’s how we call this square sandwich bread) Cut a hole in the center of the bread using a cookie cutter. Lightly spread the butter on both sides of the bread.

Take the sheet pan from the oven and place the buttered bread in there.

Pop the pan into the oven and give the bread 10 minutes.
 

Break out the eggs. Our slices of bread are fairly small so I opted for medium eggs.

After those first 10 minutes the bread should be crispy and golden on the bottom-side.

Flip them over and work fast, the pan needs to stay hot!

Break the eggs into the holes. The hot pan will keep the egg-white where we want it.

Season the eggs with a pinch of salt, pepper and a small handful of Parmesan.

Put the pan back into the oven and give them another 10 minutes, until the egg whites have set but the yolks are still slightly runny.
 

So easy and so darn tasty!

    Here;s where you work fast to keep the pan hot. After 10 minutes you flip the bread, break the eggs into the holes, season them with salt, pepper and a small handful Parmesan. Put the pan back into the oven and give them another 10 minutes, until the egg whites have set but the yolks are still slightly runny.
