Apple Couscous & Goat Cheese Cucumber Rolls

This recipe came with the Hello Fresh Box I tried a couple of months ago. The vegetable box didn’t do it for me, but the recipe was a keeper, after I tweaked it a bit. You know I can’t leave things alone.

It’s a lovely light, fresh, sweet and vegetarian spring dish with a slight kick. Funky cucumber rolls filled with a honey-sweetened goat geese and walnuts served alongside a fresh couscous salad with apple and corn salad leaves.

This salad is on the table in no time… which is probably why I’ve been eating this for lunch so often lately. It just works.

 

Ingredients:

1 cup couscous
1 cup water
1 vegetable bouillon cube
2 tbsp butter
1 cucumber
1 fresh, sweet red apple (mine was a fuji apple)
2 oz corn salad leaves
1 lemon
1 tbsp red chili oil or extra-virgin olive oil
3 oz goat cheese
3 oz walnuts
3 tbsp honey
salt & pepper

This is a recipe for two!
 

Basic couscous.

Pour the water into a big pan and add the bouillon cube and butter. Bring to a boil, stir in the couscous, turn off the heat and put the lid on then leave it be for 10 minutes.

After 10 minutes you stir the couscous well.

Wash the cucumber and use a cheese slicer or vegetable peeler to turn the cucumber into long slices until you see the seeds, then move to the other side. Throw the first strip of skin away. 3 or 4 slices per person is enough. Let them drain for a while.

Wash and dice the apple. I leave the skin on… it’s colourful.

Give the walnuts a rough chop.

Whisk the goat cheese with 2 tbsp honey (start with 1 1/2 and see if it’s sweet enough) and pinch of salt and pepper.

Stir in half the chopped walnuts.

Put a spoonful of the goat cheese mix on a cucumber slice and roll up gently. That’s it.

You can use a spicy oil, like I did, or a regular olive oil.

Mix 1 tbsp oil with 1 tbsp honey and 2 tbsp lemon juice.

Combine the diced apple and corn salad leaves in a big bowl and use your hands to work in the dressing. Carefully stir in the couscous and season with salt and pepper to taste.

Have a piece of feta or any other cheese lying around doing nothing useful? Cube it and add it. It’s delicious!
 

Finish with the remaining chopped walnut.
