Here’s a little sunshine on a rainy Thursday morning. Rainy for us, that is. It’s so cold in the Netherlands. Yuck.
This is probably my favorite dessert of all times. Crazy simple, fast to whip up, rather cheap and looking like a million bucks. I’m a sucker for fruit desserts and nothing beats fresh peaches. So peaches it was.
Grilling them really brings out their flavor, juiciness and intensifies their sweetness. Add vanilla ice cream and warm caramel sauce to the equation and you have heaven on a plate. Or in a bowl.
Note:
I used my BGE but (of course) you can make this yummy dessert within the safety of your own kitchen as well. Simply use the griddle or any other grill pan and store the peaches in a 350F (125C) oven until you’re finished with the sauce.
Ingredients:
4 fresh, ripe peaches
1 oz butter
1/2 cup brown sugar
3 tbsp cream
vanilla ice cream
Optional: vanilla sugar
Directions:
Them be peaches. Remove their skin or leave it on, whatever makes you happy makes me happy too.

Halve the peaches, remove the pit and use a spoon to scoop out that hard red stuff that stays behind. I have no idea what it’s called.

This is completely optional but it sure adds loads of flavor. Sprinkle a tiny amount of vanilla sugar over the peaches and let it sit for a while.

Add the butter (real butter, mind you) to a pan with a thick bottom.

And plunge the brown sugar right on top.

You can brush the cut side of the peaches with a bit of olive oil so they won’t stick to your grill or griddle. This won’t alter the flavor.
Place the peaches with the cut side down on the grill and slowly heat the butter and sugar. Grill the peaches for 4 minutes, until they have those pretty grill marks on them and transfer them to indirect heat (or your oven).

Keep stirring the butter and sugar or it will burn! I learned this the hard way!

Now those are the grill stripes I was talking about. You know what this is gonna taste like!

As soon as the sugar has melted—this will take about 7 to 9 minutes total—you stir in the cream and remove the skillet from the heat. There’s your simple caramel sauce.

Put a scoop of vanilla ice cream on top of each grilled peach and pour some of the warm caramel sauce all over. The ice cream will melt and it will all blend together.
