Bacon-Wrapped Hot Dogs & Jalapeno Cucumber Relish

This is, hands down, the best relish I’ve ever had and it will become a serious staple in our home. It’s a flavour explosion like no other: sweet, sour, slightly salty, fresh, crunchy, spicy and so darn flavourful. It really packs a punch.

This simple and fast relish from the Tacolicious book alone makes the gazillion calories in this bacon wrapped ‘hot dog’ totally worth it. While the original recipe calls for authentic hot dogs (d’oh), I’m using my son’s favourite mini smoked sausage. The kid devours them.

You see, good quality hot dogs and hot dog buns are pretty hard to come by in the Netherlands, kinda like the beef short ribs. So, if anyone has a tried and true hot dog bun recipe they don’t mind sharing, I’d be eternally grateful!

Until then we have to make do with what we have… which is a lot, really. I mustn’t complain.

 

Ingredients:

 

Jalapeño & Cucumber Relish

1 cups sliced jalapeño (roughly 4 large ones for me)
1 cup unpeeled sliced cucumber
1/2 onion, thinly sliced
1 tbsp kosher salt
1 1/2 tsp kosher salt
3/4 cup cider vinegar
3/4 cup sugar
2 garlic cloves
1 1/2 tsp black peppercorns
1 tsp whole allspice berries (piment for the Dutchies)
1 tsp cumin seeds
1 tsp coriander seeds
1 star anise pod
small piece of cinnamon stick
2 bay leaves

 

Hot Dogs:

4 hot dog buns, split and toasted
4 hot dogs (smoked sausages in our case)
enough bacon to wrap the sausages/hot dogs
1 yellow onion

 

Directions:

 
The original recipe also mixes mayo with lime juice and zest and slathers about 2 tbsp on top of each hot dog bun. I decided not to, but you can.
 

My pretty green babies! So glad I can buy these at the supermarket nowadays. Wash ’em up and slice them. I leave the seeds in there and it doesn’t make the relish blazing hot, but you can remove them.

Whenever I use unpeeled vegetables I prefer to buy organic. Same goes for cucumbers. Slice the cucumber and slice 1/2 an onion.

Use a food processor and finely chop the ingredients using about 10 quick pulses. Transfer to a bowl and stir in 1 tbsp kosher salt.

Grab yourself a saucepan and pour the 3/4 cup cider vinegar in there.

Top with the same amount of sugar.

Add the remaining ingredients listed under Jalapeño & Cucumber relish.

Edited to the max! C’mon, let a girl have her artistic kicks now and then! I shall name this: The Brine.

Bring the brine to a boil, lower the heat and simmer for 15 minutes over very low heat.

This stuff tastes fantastic! I can see many uses for this in my near future, at least using something that involves lots of red onion.
 

After 15 minutes you strain the brine through a fine-mesh sieve into the veggie mix. Stir well, cover with plastic wrap and let it cool off. Preferably overnight!

J-man loves these mini smoked sausages! Imagine his reaction when he got one wrapped with bacon. The kid went berserk. Wrap these or the hot dogs with bacon slices.

Slice the onion.

Heat a little butter in a heavy skillet and cook the hot dogs until the bacon is crispy all around.

Keep turning them.

Leave some of the bacon fat in there and use it to sauté the onions.

Until they’re soft and sweet. How I love onions, could never do without.

If you decided to use the lime mayo, smear some on each bun. Top the hot dogs with the onions and relish. I can see myself adding some cheese (cheddar?) as well.

Add the remaining ingredients listed under Jalapeño & Cucumber relish, bring the brine to a boil and simmer for 15 minutes over low heat. After 15 minutes you strain the brine through a fine-mesh sieve into the veggie mix. Stir well, cover with plastic wrap and let it cool off. Preferably overnight!

    Wrap the bacon around the hot dogs. Turn the onion into thin slices and heat a little butter in a heavy skillet. Cook the hot dogs until there bacon is crispy all around, leave some of the bacon fat in the pan and use it to saute the onions until they’re soft and sweet.
