Mama's Herbed Chicken

Here’s a recipe my love got from his co-worker; Michael. Actually, this Surinamese herbed chicken recipe belongs to Michael’s mom. He’d been raving about it so much that I just had to have it! Never rave about a recipe and then not give it to me, that’s exceptionally cruel.

Plus, and this is a biggie; Kay + Surinamese food = match made in heaven.

Got it in the mail, had to tweak it a bit because not all ingredients in the original recipe were available to me. Cooked it up and, oh yes, this is good food! It’s fast, it’s simple and it’s a whole lotta wow.

If you ever find yourself in a cooking rut and you need to spruce up your chicken, this is your recipe. It takes the chicken, wraps it in a blanket of yumminess and shoots it straight to the stars. Or something like that.

Ingredients:

 

Chicken & Seasoning:

1 pound boneless chicken breasts
2/3 tsp garlic pepper
1/2 tsp ground ginger
1/4 tsp laos (galangal powder)
1 tsp kosher salt

 

The Other Stuff:

1 small onion
1 red bell pepper
1 tsp turbinado sugar
1/2 chicken bouillon cube
handful fresh chervil, dill and flat-leaf parsley (or cilantro)
1 tbsp walnut oil
1 tbsp garlic oil
1 tbsp lime juice
1/2 cup water

 

Directions:

Mix up the garlic pepper, ground ginger, laos and salt.

This turned out to be a winning combination.

Coarsely chop the onion and red bell pepper.

Finely chop the fresh herbs. You can replace the parsley with cilantro. I never do because cilantro is from the devil.

We need to flatten the chicken breasts. In the original recipe they were cut in bit-sized pieces, so that’s another option.

Pound them into submission! Not too thin, though. Season the chicken on both sides.

Heat the walnut and garlic oil and add the chicken.

Add the onion and bell pepper to the chicken after it’s been cooked for a minute or 2.

Give the chicken 4 to 5 minutes on each side, depending on how thick your chicken is.
 

Flip them over once, and stir the vegetables as well.

As soon as the chicken is fully cooked, pour in the water.

Add 1/2 a chicken bouillon cube, the turbinado sugar, lime juice and fresh herbs.

Let it simmer for a few minutes. All these ingredients together create the most amazing sauce.

Pair with any kind of rice dish or onion roasted potatoes.

Ingredients

Directions
    Mix up the garlic pepper, ground ginger, laos and salt. Coarsely chop the onion and red bell pepper and finely chop the fresh herbs. Lightly flatten the chicken breasts and season them on both sides.

    Heat the walnut and garlic oil and add the chicken. After 2 minutes you add the onion and bell pepper. Give the chicken 4 to 5 minutes on each side, depending on how thick your chicken is and flip them only once. Once the chicken’s cooked, pour in the water, add the 1/2 a bouillon cube, turbinado sugar, lime juice and fresh herbs. Simmer for a few minutes.
