Burger binge! Not that I could ever tire of my comeback burger, but the last thing I need is to get stuck in a burger rut now that June’s around the corner. So I came up with this baby.
Here’s what happens when you turn my Jamaican jerk chicken into a Jamaican-style chicken burger. It packs a delicious punch.
I toned down the heat making it a bit more family friendly burger (J-man tested it for the kiddies), and gave it an almost spring like appearance with a fantastic and mellow sauce to match. Stop whatever it is you’re doing and give these a try.
You’ll love ‘em, mark my words.
Burger:
1 pound minced chicken
4 burger buns
iceberg lettuce
spring onions (garnish)
bean sprouts (garnish)
red chill pepper (garnish)
Seasoning:
1 tbsp brown sugar
1 tsp soy sauce
1/2 tsp salt
1/4 heaping tsp ground all spice
1/4 to 1/2 tsp dried chili flakes
1 tbsp grated ginger
1/2 tsp dried thyme
2 tbsp lime juice
1 spring onion, finely minced
1 large garlic clove
Sauce:
3 tbsp mayonnaise
1 1/2 tbsp sweet chilli sauce
2 tbsp lime juice
Directions:
Combine the mayonnaise with the chilli sauce and lime juice.

Such a simple sauce but so delicious. Creamy, mildly sweet and fresh. Really compliments the burger.

You can buy minced chicken or you can use your food processor to mince it as well. I used my meat grinder.
I like to know what’s in my food, and this is the best way to know: make it yourself,

Plus, it’s fun. I always get all giddy when I see the meat come out. Pathetic, I know.

And we’re there. One pound ground chicken.

Combine all ingredients listed under seasoning.

Add the lime juice and finely chopped spring onion. Stir well.

Mix it with the ground chicken.

Form 4 burger patties. Lightly wet your hands when you shape them, it helps.

Preheat your grill over medium heat and add a tbsp or so oil.
Carefully add the burgers, they’re mushy now but will firm up in no time. Cover the burgers with a lid.

Give them about 5 minutes on each side, depending on the thickness of your burger.

Make sure you cook them properly! Never mess around with undercooked chicken.
Toast your burger buns, top with lettuce, burger, spoon some sauce all over and add your toppings of choice.

This definitely is my new favourite burger: light and fresh but with lots of pizzazz.

Preheat your grill over medium heat and add a tbsp or so oil, carefully add the burgers, cover them with a lid and cook them for 5 minutes on each side. Check for readiness.
