Easy Pizza Pitas

Pizza Pitas

This isn’t really a recipe, that first. Mainly it’s just a simple snack that my son has been hooked on since the first time I made them.

The kid’s a pizza junkie. There’s just no other way to put it. If it even remotely looks or tastes like pizza, he’s game. The thought of using a few pre-made pitas as at the basis for a quick, easy and totally satisfying pizza snack would have never occurred to me. It’s brilliant!

It’s the perfect snack, lunch or even light dinner when you throw in a green salad. Don’t mind me, just sharing the pizza love.

 

Ingredients:

4 pre-made pitas
1 can pizza sauce
1 small onion
1 bell pepper
small can of corn
salami or pepperoni
sprinkling dried oregano
cheese of choice

 

Directions:

Preheat your oven to 250Cº (480Fº) with the baking sheet in it. 
 

Turn the onion and bell pepper into thin strips. I used half a green/half a yellow pepper. Heat a drop of oil and sauté the vegetables until soft but still with a bite.

This is my go-to pizza sauce when I’m strapped for time: flavourful and without artificial additions.

My son and I just need corn on our pizzas.

Turn the salami or pepperoni into thin strips. We only need a few strips per pizza.

Spread a tbsp sauce all over the flattest side of the pita, top with the dried oregano and the onions and bell peppers.

Add the corn and a few salami strips.

Top with 2 or 3 thin slices cheese. I used a mellow Gouda cheese but mozzarella works perfect, too.

Bake the pizza pitas for roughly 10 minutes, until the bread is crunchy on the outside, soft on the inside and the cheese is all bubbly. Your oven might work faster or slower than mine, so keep an eye on them.
 

I like to finish ours with a little basil & garlic oil. These are delicious.
