Onion Roasted Potatoes

I’m a potatoes and onion addict. There’s just no getting around that. Especially roasted potatoes and onions make my heart go pitter-patter.

I’ve created so many roasted potato recipes over the years, something I’ll never get tired of. But these beauties are in a league of their own and they are dead simple to prepare.

First you whip up a batch of home-made onion soup mix. Love that stuff because it’s free of additives/MSG and is so much tastier than a store-bought mix. Then you combine it with potatoes, a little oil, some salt and you roast them.

Prime rib, good gravy, onion roasted potatoes and steamed broccoli… need I say more?

 
Ingredients:

 
Onion soup mix:

2 heaping tbsp dried onions
1 1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp turmeric
1/4 to 1/2 tsp ground black pepper
1 tsp dried parsley
1/4 tsp mustard powder
1/2 tsp cornstarch

+
3 pound potatoes
3 tbsp olive oil
kosher salt

 

Directions:

Basic cupboard stuff. Nothing fancy in this recipe.

Combine the dried onions (I make my own these days), the spices with the cornstarch and parsley.

You can use it as is, but I prefer to run it through the food processor first. I use 1/2 a tsp black pepper because I like a bit of spiciness, feel free to tone it down! These amounts make for roughly 2 tbsp seasoning.
 

Peel and wash your potatoes and cut them in bit-sized pieces. I keep them a tad bigger.

Mix them with the oil and onion mix. Just dig your hands in there… it’s therapeutic. No, really!

Put the potatoes in a big ole roasting tray and sprinkle them with kosher salt.

That’s it. Just pop them in a hot oven and roast them at 200C° (400F°) for 40 to 50 minutes.
