Chai Latte

Chai Tea Latte

Making a chai latte at home is peanuts, really. Trick is to get the Chai Masala (the spice mix) exactly right. Easier said than done, I know, but I put in the work for you!

And as a result, I’ve been drinking serious amounts of chai latte trying to come up with the perfect mix ever since fonq mailed me these wonderful tea glasses.

I whipped up a chai masala with black pepper as the main ingredient, and it nearly blew me away. That’s a first. Tried one without pepper and it was completely insipid. Tried one with fruit peel and hated every single sip. But finally I got it right. And as much as I loved the one with dry-roasted whole spices that I powdered myself, for this recipe I stuck to my spice cabinet.

This is the one for me: Spicy but not too. Sweet but not too. Just enough of everything.

Ingredients:

Chai Masala:

1/2 tbsp black pepper
2 1/2 tbsp ground ginger
1 tbsp ground cinnamon
1 tbsp ground cardamom
1/4 tsp ground clove
1/4 tsp ground nutmeg

Chai Latte:

1 cup water
1 cup whole milk (it just works best!)
2 tsp Assam loose leaf
1 or 2 tbsp sugar to taste (honey is also delicious)
1 tsp Chai Masala

Directions:

* this recipe makes for 2 chai latte

It’s dead-simple. Just mix all the ingredients listed under Chai Masala. This mix smells SO crazy good.

Keep in mind that I like a bit of a zing to my tea. This is not so spicy it will make your eyelids sweat, but it’s got a nice little kick to it. If you think you’re going to wuss out on me, tone down the black pepper.

I opted for a traditional Assam tea. Ceylon and Darjeeling are great for this as well.

Combine the water, milk loose tea, sugar and 1 tsp masala in a pan and bring it to a boil.

There are several ways you can make your chai latte. My preferred method is to bring everything to a boil and slowly let it simmer for 5 minutes.

Pour the tea through a fine mesh strainer and you’re done.

Chai Latte is just the spiced tea mixed with milk, but I gotta have some frothed milk on top.
