It’s been such a hectic week with J-man off to school. Confession booth open? I feel kinda lost—I miss him a lot and the house is so empty and quiet. I guess that’s to be expected after being at home with him for fours years straight, right? But he’s having a wonderful time and that’s all that really matters.

Somehow I have to find a whole new rhythm—a new lifestyle if you will—and work around school and lunch hours, not to mention the many trips to either drop him off or pick him up. He’s bushed when he gets home and dinner had to be fast and simple this past week.


We pulled through. Mainly with the help of fast, easy but really tasty recipes. Like this one: a Greek-style wrap. It’s simple, fast but really good. Use some left-over chicken, fresh veggies, lettuce and of course Tzatziki.

Ingredients:

tzatziki
chicken
1/2 red onion
iceberg lettuce
black olives
feta
wraps

Directions:

You’ll need tzatziki. Man, this is the best sauce ever. Especially in a wrap or served with French fries. Yum. Here’s the recipe.

I cooked one more boneless chicken breast last night and tossed it in the fridge. Grilled would have been fine as well. Slice it in thin strips.

Thinly slice the red onion and the feta cheese. Or just crumble the cheese with your fingers.

You’ll need a little extra crunch in your wrap. So turn a piece of crispy iceberg lettuce into thin strips.

And chop up a handful of black olives.

You can make the Greek wraps yourself, but remember I was strapped for time, so I went for store-bought wraps.

Spread some tzatziki all over the wrap, top with the lettuce, chicken strips, red onion, feta, olives and roll it up.

Paragalo, here’s my wrap. This really is my kinda food: strong but pure flavors, fast but incredibly fulfilling. Eat as is for lunch, or serve with roasted lemon potatoes for dinner.

Ingredients
  • tzatziki
    chicken
    1/2 red onion
    iceberg lettuce
    black olives
    feta
    wraps
Directions
  1. Slice a grilled or sauteed piece of chicken in thin strips. Thinly slice the red onion in half-rings and slice the iceberg lettuce in thin strips as well. Chop up the olives and crumblel or cube the feta. Spread some tzaziki overe the wrap and top with the lettuce, chicken, onion, feta, olives and roll it up.
