Cranberry, Chocolate & Macadamia Cookies

I was randomly drying stuff—one of my favourite pastimes these days—when it dawned on me that I could dry some cranberries as well. Always good to keep on hand.

And so I did. Lots of them. And then I put them into cookies… along with macadamia nuts and big chunks of white chocolate. Because I didn’t want to break out the kMix, I used my food processor instead making it a really, really fast recipe.

They turned out sinfully good!

 
Ingredients:

1 1/2 sticks unsalted butter
2 cups flour
1/4 tsp baking soda
1 cup (light) brown sugar
3/4 cup granulated sugar
2/3 tbsp vanilla extract
1/4 tsp almond extract
2 eggs
1 tsp salt
1 cup macadamia nuts
9 oz white chocolate
1 cup dried cranberries

 
Directions:

I used my food processor to chop the macadamia nuts. Transfer them to a bowl.

I couldn’t get my hands on chocolate drops, so I just chopped it in my food processor as well. Transfer the chocolate to a bowl.

In your food processor bowl you combine the brown and granulated sugar.

Add a big pile of fluffy and creamy soft butter.

Don’t you just want to reach through the screen and steal a bite?
 

Add the eggs and the vanilla and almond extract. Blitz until it turns into a creamy concoction.

Sprinkle in the salt, baking soda and flour and pulse a few times until just combined.

Add the chopped macadamia nuts, the chocolate and cranberries and give it a few more pulses until everything is in.

This was the best cookie dough I’ve ever tasted!
 

Use a large ice scoop (about 2 tbsp) and drop dough onto your prepared baking sheet.

Give them some room. At least 2 inches!

And bake them at 175C° (350F°) for 15 to 17 minutes. Let them cool on the rack completely!

They are fantastic! Chunky and crunchy with a slight chewy centre.
