Crazy Tomatoes

Well, it’s more like Crazy Kay and her tomatoes.

You see, I’ve gone crazy with my new food dryer (got myself an excalibur) and only now am I noticing how horrible the cheap dehydrator I used for Project Jalapeño really was. This feels like coming home, like a warm bath. It’s a good thing I wasn’t born somewhere in 1600, or I surely would have been branded a witch with all these dried herbs around the house.

Being able to make fruit and yoghurt leathers, dry my Nasi Goreng vegetable mix, dry cheddar and powdering it for authentic cheese popcorn, dry peanut butter and powderize it for the best brownies ever, and even make the most delicious croutons you’ve ever eaten is an amazing thing. But my favourite will always be dried tomatoes. They’re so versatile. They become so sweet and crunchy it’s like eating candy.

I sprinkle tomato slices with a dried mix of sea salt, garlic, onion, parsley, peperoncino and oregano and dehydrate them ’til they are crunchy. I also keep a jar of sun blushed tomatoes on oil in my fridge, though.

Then I put them in my spice mill, along with some dried onions and garlic.

And I turn them into this.

Maybe add a sprinkling of oregano and some basil.

I put it on everything. Stir it into bread dough or even sprinkle it on top of stuff.

Which eventually turns into this.

I make olive oil dips with it, add it to dressings and even omelets. I well it and stir it into sour cream to go on top of baked potatoes. I stir it into my soups and sauces. There is so much you can do with it.
 

In short… I’m having way too much fun with this new toy of mine.

Peppadry

Now and then I’ll think I have a great idea. More often than not these ideas blow up in my face, but they’re fun little experiments. Having said that: this was definitely one of my brighter ideas. Not sure if you’ve noticed my deep-seated love for peppadew peppers? They’re these little bright red South African jewels. Tiny flavor-bombs. They’re spicy and sweet with a slight tang to them. I don’t…
