Bacon, Lettuce & Tomato Jam Sandwich

Bacon sandwich. Technically speaking I shouldn’t even have to write anything else after these two words, right? But I will, like I always do. I just don’t know when to shut up.

The story is short and sweet; saw this divine combination of bacon and tomato jam in a Triple D episode about a place named Cutty’s in Boston. I’m such a die-hard Triple D fan, it’s pathetic. But anyway, you could almost see a lightbulb go off in my head. I needed this sandwich and I needed it fast. So I tried it, tweaked it just a tiny bit and it came out nothing short of amazing.

Really, you should try it, too! All the green you’ll be adding gives a wonderful false sense of healthy. It works!

 

Ingredients:

1 1/2 pounds Roma tomatoes
1/2 cup white sugar
1/2 cup (light) brown sugar
3 tbsp fresh lemon juice
1 1/2 tsp kosher salt (or 2/3 tsp regular salt)
1/4 tsp dried chili flakes
1/2 tsp ground ginger
1/2 tsp ground cumin
1/8 tsp black pepper
pinch of cinnamon
+
toasted bread
Hellmann’s
cooked bacon
arugula

 

Directions:

Wash the tomatoes thoroughly, give them a rough chop and transfer them to a saucepan.

Add the sugar, salt, pepper, chili flakes, cinnamon, cumin and ginger.

Squeeze in the lemon juice.

Stir well and bring it to a boil.

Lower the heat and let the tomatoes simmer for 25 to 30 minutes.

For me 30 minutes was the magic time. Use a thermometer; the jam is done at 104Cº (220Fº).

Transfer the jam to a sterilised jar and let it cool off. Mine was only half full, but that’s okay; I’m storing it in the fridge and using it straight away.

Thinly spread some Hellmann’s on toast, top with the lettuce, bacon and jam.

Stir well, bring to a boil then lower the heat and let it simmer until it reaches 104Cº (220Fº), which will take roughly 25 to 30 minutes. Transfer the jam to a sterilised jar and let it cool off. Mine was only half full, but that’s okay; I’m storing it in the fridge and using it straight away. Thinly spread some Hellmann’s on toast, top with the lettuce, bacon and jam.
