Liquid carrot cake? Well, kinda.

I only had one new years resolution; drink more fruit & vegetable juice. So, I ordered a juicer and been juicing everything I could extract juice from ever since I received it. So far the easy part. The cleaning up after every juice is the hellish part, but that aside.

Had I known it could be this tasty I would’ve bought one sooner hoping these juices would scrub all ideas of fries, pizza and burgers from my brain.

A girl can dream, right?

The kiddo’s happy too because he loves juice. Mixing fruit with vegetables is the perfect way to get some extra nutrients into him during flu-season, but I really can’t complain because he’ll eat just about anything I put in front of him.

This is our favourite juice of the moment. It kinda tastes like carrot cake but without all the calories. It’s refreshing, mildly sweet and completely irresistible to the both of us. Keep in mind, though, that fruit juices are extremely tasty but are also high on (natural) sugar!

 

Ingredients:

2 medium carrots
2 golden delicious apples
1/2″ slice fresh ginger
1 thick pineapple slice (unpeeled)
1 large banana
good pinch of cinnamon & cardamom and/or pumpkin spice
1/2 cup almond milk
ice cubes (optional)

Directions: 

 
You can just as well make this using store-bought juice. Just skip the juicing part and take it straight to your blender.
 

Clean the fruit. I was told not to remove the pineapple peel because, as does the surrounding flesh and particularly the core, it contains bromelain; a potential anti-inflammatory agent.

Don’t go overboard on the ginger. It can get overpowering real fast!
 

Give everything a coarse chop.

Run it through the juicer. Now this, to me, is already a fantastic juice but we’ll take it to an even higher level.

Add a banana to your blender and pour the juice in there as well.

Top it with the creamy almond milk.

Add a good pinch of cinnamon and cardamom and/or pumpkin pie spice.

Blitz! Pour the juice into two glasses. I always pour them over ice, personal preference.

Liquid Carrot Cake
Ingredients
    2 medium carrots
    2 golden delicious apples
    1/2″ slice fresh ginger
    1 thick pineapple slice (unpeeled)
    1 large banana
    good pinch of cinnamon & cardamom and/or pumpkin spice
    1/2 cup almond milk
    ice cubes (optional)

Directions
    Wash everything and cut it in coarse pieces. Don’t peel the pineapple. Run everything through your juicer. Add the banana to your blender and pour in the juice. Top with the almond milk and various spices. Blitz and divide the smoothie over two glasses.
