I just moved into my very first apartment when I discovered Ben & Jerry’s ice cream; they sold it at the video rental shop around the corner. One with really bad movies, it was a miracle I even ended up there. Up until then the Dutch didn’t have a lot of variation in the ice cream department. It was kinda boring and bland back then.

That day I discovered the wonder of coming home from work only to turn the tv on, prop my feet up and kick back on the couch with a pint of cookie dough ice cream and a great movie. Nothing short of heavenly bliss.

Imagine my surprise when I ran into their recipe book! Ben & Jerry’s is a premium ice cream for sure, but it also comes with a premium price (especially here in the Netherlands), so I was kind of happy I would now be able to create their flavours right here at home without too much fuss.

The recipes are very straightforward and call for only a handful ingredients. I must admit that I was a bit nervous about using raw eggs. I couldn’t get my hands on pasteurized eggs so I bit the bullet and bought the freshest eggs possible; straight from the farm.

This was the first time I tasted Oreos and mint ice cream and it’s a terrific start; refreshing and light, kinda special for such a rich ice cream. But then again, who can resist the combination of velvety ice cream, peppermint and chocolate cookies anyway?

 
Ingredients:

2 large eggs (pasteurized or super fresh)
3/4 cup sugar
2/3 cup chopped oreo’s
2 tsp peppermint extract
2 cups whipping cream
1 cup milk

 
Directions:

Coarsely chop 6 or 7 Oreo’s (2/3 cup). Put them in a bowl, cover it and store it in the fridge.

Them be eggs. Just in case you didn’t notice. Add them to your mixing bowl.

Whisk them until they’re light and foamy. Custard-like, almost.

Bit-by-bit but you add the sugar and keep right on beating those eggs. It’ll become a really thick and gooey cream.

Pour in the 2 cups of cream and 1 cup of milk. Whisk for another minute.

In with the peppermint extract and give it one more minute.

Pour it into your ice cream machine and let it churn for 25 minutes, or according to the instructions on your ice machine.

Right before the ice cream is done, you add the Oreo’s and let them blend in. Transfer the ice cream to a freezer container.

The ice cream is best if you let it sit in the freezer for a few hours before serving.

    Add the peppermint extract and beat it for one more minute. Pour it into your ice cream machine and let it churn for 25 minutes, or according to the instructions on your ice machine. Right before the ice cream is done, you add the Oreo’s and let them blend in. Transfer the ice cream to a freezer container. The ice cream is best if you let it sit in the freezer for a few hours before serving.
