Tips for poaching a egg:
-Make sure that they are fresh (not older than a week)
-Put some white vinegar in the water
-simmering water, if the water bubbles to much it will break the egg
- don't poach in to deep water (more control)
-place your eggs with a slotted spoon on a plate with covered with kithenpaper

Love this recipe! We do the omellettes in a bag when we go camping...Kids love it. Set up the various favorite ingredients in small bowls, use a water proof marker and write names on zip lock type baggies. Crack the eggs in the bags, let the kids add their favorites and zip them up...let the kids squish the eggs and drop into boiling water over the camp fire! No muss no fuss! Simple breakfast with easy clean up!

This is how we cook eggs when the family goes on a sailing/camping trip! Delicious. Great with bacon and seasoned fried tomatoes as well (especially on a chilly September morning in the Swedish archipelago).

We bought an egg poacher from Target 2 years ago that poaches 4 eggs at a time. It's very easy to use and we used it just about every day...and the eggs come out perfectly every time.

Since I usually only do one or two poached eggs when I make them, I just microwave poach them. It's even easier. I lightly spray two ramekins with cooking spray, crack in an egg in each one, poke the yolk with a fork, add 1 Tbsp water. Cover lightly with plastic wrap. Cook on high for 1 minute. May need a few more seconds if you do 2 eggs at a time. Fast and easy!

I always had trouble too until I found silicone baking cups (for cupcakes)at the Target store, I think there wer 8 or 10 of them in the package for $1, and used these to hold the eggs. It worked great.

I always poach eggs this way.. you can add any spices you want too! Chili flakes for example... I use regular plastic wrap and I use the same method to make paté as well, using regular freezer bags (not ZIP-lock). So much easier this way and fool-proof!
