I wouldn't bake them ahead of time and then store them, Marsha. I think they'll lose their crispness and probably get a big soggy. What you can do is make them a day ahead of time, store them in the fridge and then bake them before you need them.

Hoi Kay, first of all love your site! Thanks for sharing all this good stuff :) Have made these little pizza's before, together with your pizza party ones, but always made them on the same day. Now I am wondering if I could actually make them a day ahead ? And where to store them (tin outside of fridge?) What do you reckon, any tips for that? They'll be served with the royal tomato and tortellini soup which I make at least once a month, love it!
Bedankt!

Do you suppose I could use those little pre-baked flaky shells or would they burn before the filling cooked? Just being lazy - LOL !!

Your site is awesome! The pictures really help with the step-by-step instructions. Beautiful photography, btw. You mentioned that you could make these a day ahead. How would you reheat them the next day?

I found this post from Foodgawker and was trying to use up my CSA corn and peppers...these were a HUGE hit at a party last weekend that i've been requested to make them again this weekend and my friends even donated extra muffin tins! Delicious! Easy to eat! Different! Love it! Love your blog! Oh and we used Gruyere and red onion because that's what we had on hand! Yummy!!

These look fabulous! I just found your blog yesterday and know that I will be visiting often! Thanks for putting so much time and energy into this great blog! My son and his wife visited Gouda two years ago and loved it. Do you recommend serving the Pepper and Corn Pies warm or cold?
