Our Casserole Dinner

This isn’t really a recipe so I’m listing it under Expressions (food related, though). Well, technically it isn’t a recipe; it’s what we just had for dinner here at Kayotic headquarters. Like, 10 minutes ago. Real-time blogging!

Basically it’s a casserole made from two of my other recipes. It tasted so good that I decided to take a few quick shots before we dug in. Spur of the moment thing so no pretty pictures, but oh boy, what a fantastic combo it was!

Both my guys gave it two thumbs up and especially my munchkin devoured it.


Directions:

1) Simply season 1 pound ground beef (mine was 50/50 pork/beef) the way I seasoned it for my Dutch meatballs.

2) Brown the meat while breaking it up with a spatula. Add 1 red onion (sliced in half-rings) and as soon as the onion is soft and the meat is brown you transfer it to a casserole.

3) Top it with my braised red cabbage.

4) Top all that that with fluffy mashed potatoes, sprinkle a few breadcrumbs on top and add a couple small pieces of butter.

Pop the casserole in the oven and bake at 400F (200C) until hot and bubbly.


So so so good. Sweet, fragrant and wholesome.

      I make a similar casserole handed down in our family using breakfast sausage links and sauerkraut with mashed potatoes on top
      great comfort food

      Looks good! This is the only way my family will eat red cabbage. I always slice about 2 bananas and put that on top of the ground meat before adding the cabbage. Sounds unusual, but you should give it a try!

      Yes it is casserole weather isn’t. It looks lovely. I am going to make a casserole right now ;)

      That’s another one of our fav casseroles. I add crunchy bacon bits, lots of black pepper and a handful of cheese on top :)

      Banana is so good in all kinds of dishes. My family have to watch out what they say when I ask them what they want for dinner- my youngest son once requested banana and strawberries for dinner! I served Bobotie (you know the South African dish) with a big dollop of strawberry jam- it was divine! You should have seen the look on his face though- priceless!
