Kay’s Sandwich


When someone recently asked me what my favorite lunch recipe was, I was really surprised I couldn’t find it here. I guess I just never turned it into a food posting. Shame on me. Let’s fix that right here and now. It’s a crazy simple recipe anyway. I’m definitely a sandwich person; the queen of rasher sandwiches. Bacon on tomatoes with an avocado twist. It just doesn’t get any better than that!



Bread of choice
1/2 an avocado
1/2 a tomato



Okay, so I admit I could live on these for lunch, too. Or breakfast. Or dinner. Here’s a quick peek at the cupcakes I made for J-man’s 3d birthday. They looked so cheerful!


But since you can’t live on cupcakes alone (no, really, you can’t), here’s what I use to create my all-time favorite lunch.


Bacon and avocado were simply made for each other. I’ve cooked a few bacon slices.


I’m completely addicted to these multi-grain buns. I’ve lightly buttered one. Did you know we butter our bread in the Netherlands?


I always start with lettuce; it just really adds to a sandwich and kicks the colors up a nudge.


And cheese. Not adding cheese is unthinkable. We Dutchies take our cheese seriously.


Top the cheese with a few juicy tomato slices. I never slice them too thick and have to confess I prefer my tomatoes straight from the fridge (sacrilege, I know). I just really like them better when they’re cold. I also add a little pepper to them, but that’s optional, too. Most things are optional in my recipes.


Top the tomato with a few slices of bacon. I went for two rashers—more than enough flavor and no real arterial damage.


The avocado is definitely my favorite fruit/vegetable. I take out the pit and slice it without taking the skin off. Works like a charm that way. Add a few slices to the sandwich. The slices that don’t fit in there anymore, well, eat those first!


This too is optional; I like to sprinkle a little salt and pepper on the avocado. Sometimes I’ll add a drop of extra-virgin olive oil and some fresh lemon juice as well.


It’s not just a really tasty sandwich but it’s actually quite a filling, healthy and wholesome lunch. Especially when served with one of my (many) other addictions; a big glass of cold milk.

      OH MY! I will definitely have to try your version. I dearly love a BLT and with avocados on it that would be that much better….I prob would sub mayo for the butter.

      Ummm I think I am going to be partial to that one this summer. Esp since I have planted 50 tomato plants. ( I have a problem :) )

      But my all time favorite is a tomato and basil sandwich.
      A little Mayo (not salad dressing!), fresh tomato, fresh basil (chopped not alot) salt and pepper, bread of choice. Eat myself stupid!

      This would definitely constitute my favorite sandwich, as well. Avocado, bacon, cheese, a good whole grain bread… what could be better??

      If you like cold Tomato slices, slice them and then put them in the fridge, they last a long time! Make sure you cover with plastic wrap! :)

      My favorite sandwich is Roast Beef, Provolone and tomatoes, with spinach and then you grill it, like a panini! mmmm I like mayo with mine, but butter would work too!

      I really enjoy your recipes! I tried the Raspberry Cheesecake Brownies and they were a-ma-zing! Lekker! :) All my friends loved them.

      An idea for a sandwich from a greek girl! I call it greek sandwich.

      Quite simple, you just grill the bread a bit and add some olive oil and rub a garlic glove on it. Then use feta cheese, ripe tomato, and chopped pitted kalamata olives in it. You can add some cucumber if you like. And of course salt, pepper and oregano!

      I’m not a great cook but I’m sure you can find a way to upgrade this sandwich to sth amazing once again!

      This looks SO similar to my favorite sandwich at a restaurant here called Charlestons. It has sliced grilled marinated chicken breast slices, bacon, avocado, sprouts, tomato and lettuce and it’s served on this really soft sliced multi-grain bread – they toast it on the side the filling is layerd between and the outside of the bread is’s SO yummy! It’s served with honey mustard dressing.

      Dorie Greenspan has a really interesting sandwich on her site that she found over in Laos – a baguette slathered with mayo, then hot chili sauce (srirachi), sliced chicken breast, long thin slices of cucumber, lettuce and then a drizzle of sweet chili sauce…that is next on my list!

      The Greek sandwich sounds absolutely delicious! I’ll be trying it this weekend. Might add a few drops of tzaziki to it!

      I make it with some leftover deli chicken, too! Bacon and deli chicken that is :) Even an egg on top tastes fantastic!

      I never thought about adding honey mustard dressing, though. Sounds like a fantastic combination.

      I love sandwiches. Right now I’m eating turkey, cheddar, spinach and tomato on a good 8 grain bread with mayo and mustard, S&P like crazy. Simple, but there’s just something about a well made sandwich. I’ll definitely be trying this combo!!

      My favorite sandwich used to be: Sesame seed bun, lots of sweet grainy mustard ( a German thing), slice of Emmental cheese, slice of tomato, and sliced German pickles… mmh.

      I’m a big fan of sandwiches as well. Could eat them all day! This sounds like a particularly good one. I too love my tomatoes cold.. Maybe it’s a Dutch thing… :)

      YUM!! This sandwich looks delicious!! I absolutely love avocado, and I’ve never tried it with bacon. I think I would add a little mayo, or even aioli on that bread! :)

      This looks and sounds fantastic. This sandwich is next on my list. I tried your curry chicken salad on bread and that was awesome so I know this will be just as good. Thanks for sharing.

      Fabulous cheery looking cupcakes.. I love cupcakes but they are a bit hard hitting on the figure if you eat them all day
