Almost but not really a recipe. I just had to post it!
I made lasagna the other day and still had some cottage cheese leftover with no idea what to use it for.
Never been a really big fan of cottage cheese, even though I know it adopts other flavors very well and is low in fat and high in protein.
So… here’s what I did: I simply added some roasted bell pepper, lettuce, chives and avocado and put it on top of lightly toasted slices of French bread.
Score! It tasted great.
Ingredients:
French bread (thick slices)
cottage cheese
roasted red bell pepper
iceberg lettuce
avocado
chives
salt & pepper
Directions:
I’m sure there are a lot of things that don’t taste better with roasted peppers, but I don’t know many of them.

Hard to imagine that for over a decade just the scent alone made me nauseous. Now I eat bell peppers like they’re going out of style.
Now here’s the deal.
For photography purposes I started with a bread slice and topped it with lettuce, cottage cheese, salt, peppers, avocado, chives and pepper. Had I not taken photos I would have just plunged it all—lettuce included—into a big bowl, whisked it all together and topped the bread with that.
How’s that for honesty?
I like it when tasty, healthy and pretty go hand in hand.

I desperately needed some health food but don’t let me keep you from crumbling a little bacon on top as well!

I’m a HUGE cottage cheese fan. Love to eat it straight out of the container! :) Also really enjoy it alongside mac and cheese.
I really only like it when it’s combined with something, think it’s pretty flavorless on its own. But this was the perfect combination of flavors for me!
Cottage cheese and mushrooms….the two things I dislike (foodwise) the most! I think it the texture more than the taste that gets me with cottage cheese. For years I never liked lasagna which is weird because I love all other pasta. Then one time, I was at someone’s house and they had made lasagna and I loved it….they didn’t put any cottage cheese in it! (and Ricotta cheese is just too expensive to use for lasagna in Canada). Kay, I’m so glad you are posting regularly again! Love your posts….except for ones with cottage cheese, haha
Can’t begin to tell you how good it is to be back.. cottage cheese or not :)
I love it straight and I like to mix fruit in it. I also like to mix it with canned pumpkin (not pie filling) and add spices to it. Tastes a bit like pumpkin cheesecake!
For me it’s the complete lack of flavor I really don’t like. It tastes like… nothing. I do like the chew structure but can see why it might put someone off. I feel that way about broccoli :)
I hear you. When I mix it with the pumpkin I puree it first so it looses the lumpy texture. I also spread it on bread like that, sort of a higher protein cream cheese if you will. I am definitely trying your recipe here too.

I just discovered my love for cottage cheese, but I must say that my favorite way to eat it is as a dip for potato chips. Ha! Your recipe looks much more sophisticated and healthy. :)

I looove cottage cheese. My favourite way is to have it with just sour cream or in a salad with tuna or beetroot or salmon. It makes a nice and simple side dish/salad when combined with sour cream, tomatoes, chives and seasoning (served with new potatoes in the end of summer).
It is also great for baking a cake.
My question is: where to get cottage cheese from in the Netherlands and what is it called? I am originally not from here and haven’t been able to track it down.
I forgot the infamous combination of cottage cheese, salted herring and boiled egg :)
Here in NL you need to look for something called “Hüttenkäse”. All supermarkets carry it although the quality is not fabulous. There are a lot of cheese specialty stores that sell great quality cottage cheese.
How about on toast, sprinkled with cinnamon. Slip under broiler til it nearly bubbles. Top with apple jelly. Yummy. Love reading your blog! 65 year old grandma from New Hampshire in the U.S.A.
I usually toast some bread, spread cottage cheese on it and pour some honey all over and then slip it under a broiler. My son loves it like that.
I like to mix it with a good spicy salsa and eat it with a tortilla chips. The cottage cheese takes a little of the bite out of the salsa and the salsa gives the cheese flavor.
My favourite way to eat cottage cheese is to mix i some salmon salad. I make a very simple salmon salad with canned salmon, mayo, green onions finely minced, and fresh ground pepper and it really adds flavour to the outage cheese. even eat the cheese with just a lot of fresh ground pepper on it.
I developed a taste for cottage cheese quite suddenly, and now enjoy eating it plain, right out of the tub, as well as with fruit or a veggie salad. Small-curd, organic. Yum.
I’m with you on the whole needing healthy food thing… Far too many sweet things lately, so this would go in really nicely. With or without the bacon (I think without at the moment) And I actually do love cottage cheese!
With the exception of the avocado and roasting the pepper, I grew up on this salad. Sometimes, Mom would place a peach or canned pear half on a lettuce leaf with a scoop o’ cottage cheese for a dessert. Once we made “banana splits” replacing the ice cream with cottage cheese and topped each mound with fresh fruit, sprinkled with coconut (replacing whipped cream). Thanks for bringing back memories. BTW, happy belated Sinterklaas. I hope you had some pepernoten and DE coffee for me.
I eat my Hüttenkäse about daily, either plain out of the tub, add it to avocados and tomatos for a simple guacamole or (my favorite) on top of Knäckebrot with some tomatos or cucumbers and a dash of salt and pepper.

I love it on bread, mixed with salt, black pepper and fresh basil and with tomato and a few drops of good olive oil on top. Chives instead of basil is nice as well, but Ilike basil better.
I mix cottage cheese with ricotta cheese, add frozen wild blueberries, cinnamon, and honey, nuke it for 30sec. And top my spelt pancake with the mixture for breakfast.
I love cottage cheese! I like it with cut up tomatoes and pepper or just with some fruit. It is especially good with red grapes. I add cottage cheese to yogurt to boost the protein content of a snack or light meal. Love your food blog!
Here’s a few ways I enjoy cottage cheese: as a dip with Fritos corn chips, with canned peaches or with a fresh juicy nectarine. Have recently found your blog and have tried a couple dinner recipes, they’ve been very good. Thanks.
