Cherry Coke & Jalapeno Meatballs

Well, they’re actually cherry coke & jalapeño glazed meatballs, but that didn’t fit into the excerpt title on my landing page. Shrugs.

These are my go to snack meatballs, but don’t let me stop you from having them for dinner.

They’re spicy, I won’t lie. They’re not going to make your eyes tear up or pop out of their sockets, but they’ll definitely get a ‘Whoa baby!’ if you do it right. Guys tend to like these a lot. Not sure why. Testosterone food?

You can tone the heat down a bit, but they don’t taste nearly as good without it. They need zing! And the heat is mainly on the outside.

But that’s coming from me, a spicy spice fiend.

 
Ingredients:
 

Meatballs:

1 pound ground beef
1 large egg
1/2 cup breadcrumbs

Seasoning:

1 1/2 tsp salt
1 1/2 tsp sweet paprika powder
1/2 tsp onion powder
1 tsp black pepper
1/2 tsp ground nutmeg
1 tsp brown sugar
1/4 tsp garlic powder
1 tsp dried parsley
pinch of cayenne

Glaze:

1/2 cup brown sugar
1/2 cup cherry coke
3 jalapeños

 

Directions:

Even he eats them. But in all fairness, the kid can eat spicier foods than I can.

Preheat your oven to 400F° (200C°).

Normally I do this with green chili peppers, but I still had some chopped up jalapeños in my freezer.

I used roughly 2 slightly heaping tbsp of the spice mix. Feel free to use less or more. Technically you can use it all.

Add an egg and the breadcrumbs and dig in. Mix it all up.

Make medium-sized meatballs using an ice scoop.

I need a silpat mat! Used baking paper instead and placed them on a baking sheet.

I’m using my oven for them. Saves on butter. Give them 15 minutes in a preheated oven at 400F° (200C°).
 

Time to make the glaze. Use a skillet or saucepan with a thick bottom and mix the sugar and jalapeños.

This stuff is retro! I can still remember myself as a little girl, all excited when my mom bought me and my brother a bottle.

Pour 1/2 a cup of sparkly cherry coke in with the sugar.

Bring it to a boil.

I love this shot. No idea why. Anyway, give it 7 to 10 minutes over medium heat.

Flip those meatballs after 15 minutes, and give them an extra 10 minutes.

Okay, one more for the heck of it. Look at those bubbles! Stir now and then.

As soon as it stops bubbling fiercely after you’ve stirred, it’ll be the perfect consistency. It took 8 minutes straight for me.

After the last 10 minutes you brush the meatballs with the glaze. Pop them back into the oven for another 5 minutes.

Ingredients
    Meatballs:

    1 pound ground beef
    1 large egg
    1/2 cup breadcrumbs

    Seasoning:

    1 1/2 tsp salt
    1 1/2 tsp sweet paprika powder
    1/2 tsp onion powder
    1 tsp black pepper
    1/2 tsp ground nutmeg
    1 tsp brown sugar
    1/4 tsp garlic powder
    1 tsp dried parsley
    pinch of cayenne

    Glaze:

    1/2 cup brown sugar
    1/2 cup cherry coke
    3 jalapeños
Directions
    Mix all the spices listed under seasoning. Use 1 1/2 to 2 tbsp on 1 pound ground beef, add the egg and breadcrumbs and mix it all up. Make medium-sized meatballs using an ice scoop.

    Bake them 15 minutes in a preheated oven at 400F° (200C°).

    Combine the brown sugar, cherry coke and deseeded and finely minced jalapenos. Bring it to a boil and while stirring occasionally, cook it over medium heat for 7 to 10 minutes. Until it’s a thick syrup.

    Flip the meatballs and give them an extra 10 minutes oven time.

    Brush the glaze over the meatballs and put them back in the oven for 5 minutes.
Meal type: snack, main course, party food

      These look… delicious. I really need more time to cook in my schedule. I just stumbled onto your site, and everything looks just ridiculous (in a good way).  I’ve been downloading recipes from fitango.com because they’re usually easy/simple/tasty. Most of your stuff looks quite complex (but I still want to try!) Do you have a quick & easy section?

      So tasty it’s unreal. I have no idea what to serve them with though! I don’t even know if I could make a little side sauce to go with :) What do you think? Couldn’t recommend more!

      wow! The glaze sauce is great. I made a double batch. I’m not a fan of nutmeg so that will be out of the next batch of meatballs. I think I might try a bit of bourbon in the glaze mix too. Thanks for a fun snack recipe.

      these meatballs are amazing!!  just made them for dinner tonight and they were a hit.  My husband thought the glaze sounded strange but he was a huge fan after he tasted them.  will absolutely make them again!

      Do you think I could make these in the crock pot with pre cooked frozen meatballs?  If I make the sauce in the pan like you said then add to crock pot?

      Making these tonight!  Excited to try this recipe… for lack of time I am using pre made meatballs… for lack of cherry coke in Canada I am using doctor pepper… hope they work out!

      I just made these! the meatballs were DELICIOUS! but i must’ve done something wrong with the glaze because it was too sweet for me. Probably because i used one jalapeno instead of three, we cant take heat so i thought it would be okay. Thank you for the recipe!
