Easy Baked Carrots

Carrots are definitely my favorite vegetable. If you’re not taking my serious onion addiction into consideration. If you haven’t tried my caramelized carrots, you’ve been missing out! They are fa-bu-lous, dahling. But here’s another great way to prepare carrots, it’s called lazy cooking. You just throw everything in a big tray and let the oven do the work for you. These carrots are juicy, crispy and fragrant at the same time….

    Vegetable Cookies

I’m always on the lookout for new ways to sneak more vegetables into the kiddo’s diet. I’m pretty bad when it comes to that. Jessica Seinfeld got nothin’ on me, I tell you! Not even chocolate cake, hamburgers or pancakes are sacred to me. I literally spike everything with (pureed) veggies. Many things end up tasting better, richer even, when you add some veggies to them. This time ’round, I…

      Carrots & Mango

I’m always trying to find new and different ways to prepare carrots. I have my much beloved caramelized carrots -which are absolutely yummy- but I have yet another recipe to add to the list. You might have heard of this combination in a smoothie, but do you know how delicious it is when you combine carrots with mango and stir-fry the whole shebang? Add a little fresh note to it in the…

I’m shamelessly promoting celery (celeriac) root here. It’s so good that I feel compelled to share the love! You can spike up many dishes with it, anywhere from soups to stews and even salads. My Dutch split pea soup & Dutch winter stew always have some in it. But it’s also a pretty darn tasty vegetable on its own. I used to eat this a lot when I was low…

          Curly Endive Mash

A stamppot is a really traditional and simple Dutch dish; mashed potatoes with one or more (root) vegetables. What I really love about a good ‘stamppot‘, though, is how you can add almost anything to it and still have it taste great. It’s a great way to clean out your vegetable drawer at the end of the week, because you can easily combine two or more vegetables! Usually a stamppot is served with smoked sausage (like the one…

            Rustic Roasted Vegetables

I live on the edge of Gouda. Literally on the edge. Right next to my house lies a huge park that marks the end of Gouda. I adore walking around there with my boy, seeing all the golden en red autumn leaves twirling around, my munchkin tossing them high up in the air, small leaves ending up in his fuzzy blond hair, his cheeks all flushed and his eyes sparkling…
