Ham, Cheese & Chicory Rolls

This casserole is made of awesome! And no, I’m definitely not exaggerating. Not this time. We’re talking spiked mashed potatoes topped with ham, cheese and chicory (endive) rolls. What’s not to love? It’s a family recipe and undoubtedly a staple recipe in many Dutch homes. You can easily prepare this casserole ahead of time, which is a big plus to me. It’s the kind of casserole I’ll whip up when I know the next…

    Crunchy Sweet Potatoes

Have a quick and fun recipe for you. Not too healthy, though. Think of these babies as a fun variation of French fries, or something along those lines. A friend of mine mailed me this recipe thinking it might be worthy of a blog posting. Worthy? Heck, yeah! She knows I’m very picky about the recipes I post. I don’t want to slap up ridiculous recipes just for the sake of blogging….

      Brussels Sprouts. The Mash.

Here’s a slightly different and more rustic way of eating Brussels sprouts. The Dutch way, so to speak. Definitely my way. Pretty straightforward cooking, no frills, nothing fancy, just food as it was meant to be. We like to mash our vegetables in with our potatoes and call it stamppot. Gives you a lot of options to boost the flavor. Now I’m blessed with a son whose favorite vegetable happens…

Reliving my childhood through mashed cheese potatoes. Eating this brings me right back there. I can see myself sitting at the dinner table: scraped knees, bruises and a messed up ponytail while eating a big plate full of this. I could have come up with a smashing name for the dish, but I didn’t. It’s just one of those really simple and old family recipes. They didn’t come with fancy names…

          Country Potato Salad

It’s still summer here, giving me just enough time to throw in a few last summery dishes before we’re moving toward autumn at a rapid pace. Some time ago I posted my Kay’s Potato Salad—a typically Dutch mashed potato salad with a slight hint of fresh apple—but here’s a more American type of salad for those of you who cringe at the thought of mashed taters in your salad. It’s actually very undutch to eat a…

Kay’s Peanut Soup. The Other One.

I’ve always been a huge fan of peanut soup, peanut sauce etcetera. Anything peanut butter is fine by me. Though the word fan is an uderstatement. Think of me as a closet peanut junkie trying to get a fix. The Chinese toko downtown—the one where they sell spicy Surinam peanut butter—is my dealer.
