Kayotic Mash II

It dawned on me, I have very few side dishes that are a perfect match for seafood. When I eat codfish or salmon, I like to keep it simple; let it taste like fresh fish is supposed to taste. A little salt and pepper, maybe some fresh lemon juice and a little dill, a light white sauce on special occasions, but that’s about it. Now my caramelized carrots make a great side dish…

    Hungarian Potato Goulash

I dislike wasting food, I really do. I suppose I got that from my mom and grandma—who both lived through world war II, when wasting food was considered a crime. Even though I’m 35 and (thank God), not ever having experienced war and hunger, I still think it’s a crime to waste food. Pretty much everything in my fridge is used until it’s all gone. I go to the market for…

      Sweet Potato Rösti

I like sweet potatoes, I really do, just not as a stand alone vegetable. As long as they’re inside a sweet potato pie (passing up a piece of that would be too much for my crazy lack of willpower), or when they’re part of something such as my rustic roasted vegetables, I like them a lot. Otherwise they’re simply too sweet for me. I’m really a savory kinda girl. But…

        Ghanaian Peanut Soup

Here’s a simple, completely unprepared, spontaneous and slightly odd recipe. Spur of the moment thing, so bear with me. I had quite a bit of leftover mashed potatoes from yesterday’s winter stew and a little extra time on my hands today. The last time I turned them into potato crepes -which is a pretty good way to use them- but I wanted to do something really different this time. Especially for all you Americans…

          Rustic Roasted Vegetables

I live on the edge of Gouda. Literally on the edge. Right next to my house lies a huge park that marks the end of Gouda. I adore walking around there with my boy, seeing all the golden en red autumn leaves twirling around, my munchkin tossing them high up in the air, small leaves ending up in his fuzzy blond hair, his cheeks all flushed and his eyes sparkling…

            Roasted Lemon Potatoes

Here’s one of my shorter intros (now wipe that relieved look off your face!). Bought cod fish on the market and -with the crazy prices nowadays- wanted to turn it into a special dinner. Planned on serving the fish with a white sauce, maybe a hint of a fresh dill on top, some juicy and slightly crispy steamed baby carrots on the side and it needed a special potato side dish as…
