Herbed Potato Salad


I’ve been on a major potato salad kick lately, especially with the warmer weather upon us. They just go so well with so many things.

As much as I like my regular potato salad or even my beloved country potato salad, sometimes I just want something a little lighter and a tad less fattening than a salad with a cup of mayonnaise in it, but every bit as flavorful. In fact, I even dare to say that this herbed potato salad is more flavorful and powerful. The flavors are far more pure, intense and the herbs add a freshness to the potatoes that you just can’t get with mayonnaise.

This fresh and lightly acidic potato salad goes extremely well with any type of grilled meat or chicken, so it makes a perfect addition to your BBQ. Throw in a big, crispy green salad or the Moroccan Tomato Salad I posted last Monday, and you have one seriously amazing meal.

Hasselback Potatoes


This recipe comes from my sister, Celia. Not that she invented it or anything: she just 'accidentally' mentioned them to me in detail, about two weeks ago now, after I rubbed several photos of gooey cinnamon rolls in her face. It was a life-changing moment! I’d never heard of Hasselback Potatoes and had to ask her what they were.

After she was done laughing at me and mocking me, she explained it’s a Swedish recipe that takes its name from Hasselbacken, a Stockholm restaurant where it was first served.

I gave them a go and, oh boy, they didn’t last long here. They're magical and so worth the mockery I had endure from my cruel sister. Not to mention they’re ridiculously simple but look (and taste) like a million bucks.

Kayotic Stove-Top Casserole

 

This will probably get filed under seriously freaky recipes, but I imagine weird recipes are somewhat expected of me anyway! Man, I love having this outlet for my strange culinary train of thoughts. And getting away with it!

You know how I like to mix and match vegetables, right? How I love our infamous Dutch hodgepodges? And ground beef? The really down-to-earth type of food that you can feed nearly anyone and that somehow never bores. The most forgiving recipes are those made with the ingredients listed here. You just can't go wrong. 

Out of sheer boredom, I combined one of my mix and match mashes with some sort of sloppy Joe-style beef sauce---it's not nearly as weird as it sounds---and ended up with a dish that would best describe itself as 'stove-top casserole'. 

Hard to explain what I mean, so why don’t I just show you...

Potato, Tomato and Onion Mash



I promise, this will be the last hodgepodge posting for now! Well, maybe not the last one, but definitely one of the last few now that we’re approaching warmer weather. I’ll miss my mashes, that’s for sure. I simply had to share it because it turned out to be a really good recipe! Pretty unorthodox mash, but those are often the best, right? Ham, Sauerkraut & Apple Rolls (on cheese potatoes)


Don't be hatin'! I really didn't mean to do it. Honestly, I didn't mean to post such a calorie-bomb this early in the morning, but I’m doing it anyway! Two simple reasons for that:

a) you'd never forgive me for not sharing this recipe with you
b) it's just too good to pass up

So, if you have any intentions of adding a teeny tiny layer of insulation over your hips or bottom---which isn't necessarily a bad thing during this cold winter we've had---this is the way to do it!

Ham rolls filled with a sauerkraut & apple mix right on top of cheesy potatoes. What can I say? Gotta love comfort food.

Fluffy Pesto Mashed Potatoes


I think I might have created a whole new favorite side dish to go along with fish. At least for my family, that is. It hit all the right spots and we loved every single bite. They’re creamy mashed potatoes, seasoned with a hint of subtle tasting (homemade) pesto rosso, combined with soft leeks and finished off with loads of Parmesan cheese. Need I say more? Read More »
