Kay’s Chicken Burritos

I love a good burrito. But this was the first time ever I cooked chicken burritos and didn’t use some sort of salsa type of sauce or even avocado, which in my world is inextricably connected to burritos. Just wanted to try something different and use what I had on hand this time. So, I boiled the chicken, used different vegetables than I would normally use, made a lighter sauce and…

Gramma’s Creamy Potato Bake

I do our weekly grocery shopping on Saturday and throw in an extra trip to the market for fresh veggies and fruit on Wednesday morning. But still I find my fridge void of food somewhere around Friday. Those two guys eat me poor! Does that ever happen to you? That you find yourself standing in front of your fridge not knowing what to cook because there isn’t enough of something to…

Can I haz Cheeseburger?

This ain’t your average cheeseburger, that’s for sure. It’s BBQ season! Finally the snow’s gone and it’s time to get your BBQ on! We fired up the pit. I got the idea for this in my cherry coke & jalapeño meatball posting—where Jacques mentioned a recipe that called for Italian…

Cod with a Salsa Twist

I’m trying to eat more fish, at least once a week. It’s tasty, easy to cook, healthy and what’s even better; it lends itself to versatility. You can be as creative as you want with toppings, crusts and sauces. I just wish it wasn’t so darn expensive. At least in the Netherlands it is. So, I tend to play it safe when cooking fish. But there’s one combination that’s simply…

Sweet Sauerkraut Casserole

We have a thing for sauerkraut here in the Netherlands. You’ll mainly see it mashed up with potatoes. Not to mention served with smoked sausage, bacon bits and gravy. It’s great. I like to add a little sweetness to my sauerkraut, like my ham, sauerkraut & apple rolls. I also make a mean sauerkraut dish with curry gewürz—a curry spiced ketchup—and banana slices. Sounds totally nuts but it tastes really good….
